Class Timeline

Our Culinary Job Training is an intensive 10 week program designed to send graduates out into the culinary workforce prepared to succeed. Here's a basic overview of the course:

Week One - Orientation, Basic Sanitation, Culinary History, First Aid, Personal Hygiene, Self Esteem, Tools & Equipment, Basic Knife Skills.

Week Two - Basic Cooking Techniques, Flavors and Seasoning, Nutrition, Financial Literacy, Stocks, Sauces, Menus, Recipes, Problem Solving.

Week Three - Poultry, Salads, Financial Literacy at M&I Bank, Food Presentation and Garnishing, Farinaceous Cooking, Measurements.

Week Four - Dairy Products, Bread Baking, Buffet (1st public exercise).

Week Five - Meats, Covering Kids and Families, Vegetable, Midterm (Chicken Parmesan from scratch)

Week Six - ServSafe Training and Testing, Conflict Management, Menu Planning, Meats at US Foods.

Week Seven - Line Cooking Prep and Line Cooking (2nd Public demonstration), Meal Starters.

Week Eight - Chocolate, Financial Literacy, Dress for Success and Danny's Closet of Hope Appointments, Resumes and Interviews, Breakfast Prep, Soups, Goal Setting.

Week Nine - Resumes and Interviews, Three Minute Presentations, Financial Literacy, Coffee, Job Search, Effective Communication.

Week Ten - Final: Written and Practical Exam, Food Writing , Advanced Communications, Graduation.
