Urban Times Part 2 - Chef Carl sets high standards for students

The demand is clearly there. Each 10-week session of Second Helpings’ Culinary Job-Training Program draws over 100 applicants for a class which has typically numbered about 15.

But the economy has brought even more people to Chef Carl Conway’s door. He selected 28 for the most recently completed class. Twenty-two of those began the free, full-time course. Seventeen graduated – the largest class ever.

It was not easy. Conway sets high standards for his students. “What we try to do is give them realistic expectations of what’s to come in the industry. I tell them they will never work anywhere that has higher standards than they learn here,” said Conway, who came to Second Helpings after two university degrees, culinary training and a career in the military.
